DAGING KAMBING TIDAK MENYEBABKAN KENAIKAN TEKANAN DARAH

Masih memperingati Idul Adha, dimana seluruh umat muslim dibelahan dunia melakukan qurban (Selama periode kekurangan pangan setelah PD II (1945-1965), ada kekurangan berat protein hewani untuk konsumsi manusia di Okinawa dan wilayah Asia. Dilaporkan bahwa hidangan dari daging kambin digunakan sebagai makanan obat yang menyelamatkan banyak nyawa di Okinawa. Selama periode pertumbuhan yang stabil dalam perekonomian Jepang (1966-1989), daging babi, telur, susu dan ayam secara bertahap menjadi lebih mudah tersedia. Meskipun demikian, penduduk Okinawa menunjukan preferensi yang kuat untuk hidangan daging kambing.

Sementara ada rumor yang gigih bahwa konsumsi hidangan kambing daging meningkatkan tekanan darah, tidak ada bukti ilmiah untuk mendukung hal ini. Dua eksperimen dilakukan untuk memperjelas apakah tekanan darah meningkat bersamaan dengan konsumsi hidangan daging kambing.

Pada tahun 2014, Katsunori Sunagawa dkk melakukan dua tahap eksperimen yang mengejutkan, eksperimen pertama menggunakan tikus yang :

  • Mengkonsumsi ayam + garam 0,3% garam (kelompok kontrol)
  • Mengkonsumsi daging kambing (DK) + 0,3% garam (perlakuan 1)
  • Mengkonsumsi daging kambing (DK) + 3-4% garam (perlakuan 2)
  • Mengkonsumsi daging kambing (DK) + 3-4% garam + mugwort (perlakuan 3)

Diketahui bahwa perlakuan 1,2 dan 3 tidak mengalami kenaikan tekanan darah pada minggu awal. Namun pada minggu-minggu berikutnya, perlakuan 2 dan 3 mengalami kenaikan tekanan darah. Selanjutnya perlakuan 2 dan 3 dikurangi konsumsi garamnya dari 3-4% menjadi 0,3% dan hasilnya normal.

KESIMPULANNYA, bahwa konsumsi daging kambing dalam waktu lama tidak meningkatkan tekanan darah, justru kandungan garam saat preses pemasakan yang memicu kanaikan tekanan darah.

Jadi gimana? Sudah yakin kalau konsumsi daging kambing itu aman? Asalkan diolah dengan benar.(Asih Putri)
